
Everyone loves Chinese stir fry. Its so quick and easy to dish up and mostly from whatever is in your fridge. Doesn’t really need a lot of prep either.
Here is another of easy peasy recipes which I love and make so often. You can use any protein or vegetables for it. Key is to make the sauce mix which more of assembly work and then throwing in the pan with your mains.

Ingredients
- Tofu 250gms
- Tenderstem broccoli about handful
- Pak choi 2-3 small heads
- Handful of cashews
- 1 medium onion
- 2 medium garlic cloves
- 1/2 inch of fresh juicy ginger
- Vegetable oil to cook
- Peanuts for garnish (Optional)
For the sauce mix
- 1 tsp dark soy sauce
- 1 tsp oyster sauce
- 1/2 tsp fish sauce
- 2 tsp rice vinegar
- 1 tsp sesame oil
- 1 tbsp honey
- 1 tsp chilli flakes in oil OR just chilli oil
- 2 tsp hot water
- 1 tsp white sesame seeds
Method
- In a pan or wok heat 2 tsp oil and add diced tofu and cashew. Ensure the pieces are not too thin or small else they may get disintegrated.
- Toast the tofu on both sides till its brown and has a toasted crunch. Remove and set aside
- In the same pan add another 2-3 tsp oil and throw the finely diced onion and garlic. Toss on high heat for few minutes
- Add the broccoli and cook for few minutes. Now add pak choi and cook for few minutes
- Meanwhile mix all the ingredients of the sauce mix in another bowl
- Once the vegetables are just about cooked add the tofu and cashews and the sauce mix. Mix it well and reduce the heat else it may burn.
- If its too dry add few tsp of hot water. Toss all ingredients in the sauce well and cook for few minutes.
- Remove from heat, garnish with green spring onions and peanuts and serve with rice or noodles.

If you want more sauce you can always double it up and add some water. Ensure there is a right balance of soy, honey and some acidity with vinegar or lime. I like it more as a stir fry with rice. Just a tip, do not add salt till the end as the sauces contain salt and it would be more or less enough for the dish.
