Red kidney beans panzanella

I know Panzanella has summer written all over it, however it’s such a versatile salad that I make it in all seasons. Plus you can get very creative with the combinations.

This salad recipe is super simple, super healthy and very nutrition dense. The red kidney beans are the star of the recipe. You can use ones from a tin or a can; Or you can soak them overnight and then boil them next day.

Other additions to the salad are usual suspects like tomatoes, onion, cucumber and rocket. The addition of feta gives it a real salty nuttiness. You can dress it up in your own way like with some parsley or other herbs.

  • 1 cup of boiled kidney beans. If using a can strain the water and rinse under cold water and let it dry
  • 1 medium onion
  • 1 medium cucumber
  • Handful of cherry tomatoes
  • 1/2 cup of feta cheese, crumbled or diced in cubes
  • Handful of rocket leaves (argulla)
  • Brown bread, you can use a baguette OR any other bread, usually leftover bread.

For the dressing

  • 2 tbsp olive oil
  • 2 tsp wholegrain mustard
  • 1 tsp honey
  • 1 tbsp balsamic vinegar
  • 1 tsp red chilli flakes
  • Salt
  • Pepper


  • Prepare the dressing. Combine all ingredients and shake it well. Taste and adjust the ingredients based on your liking.
  • Chop all the vegetables (onion, cucumber, tomatoes can be halved)
  • Break the bread roughly into pieces, drizzle some olive oil and toast it in a pan until nice and crispy. I used a normal sliced brown bread. I used 3 slices of it which I toasted using an electric toaster. After removing it, I rubbed garlic on the bread slices and then drizzled olive oil on them and cut them into pieces. You can follow any method as long as you get a nice crispy bread as it compliments the juicy vegetables
  • In a large salad bowl combine all the ingredients including the bread. Now drizzle the dressing, mix well and transfer onto plates or serving dish.
  • Eat fresh and enjoy

Its a delicious and nutritious salad with legumes, vegetables and some brown bread. It can be served as a side to meat or chicken. Or you can have it just on its own.
